Cinnamon Buns

Ingredients

• 3/4 c non-dairy milk

• 2 1/4 tsp active yeast

• 3 cups whole wheat flour

• 1 tbs baking powder

• 1/4 tsp fine salt

• 1/4 cup raw sugar

• 2 tsp ground cinnamon

• 5 tbs unsweetened applesauce

• 4tbs brown sugar

• 2 tbs raisins. ( optional - I add these , but I soak in warm water for 10 mins first

• Icing

• 1 cup confectioner's sugar

• 1 tsp non- dairy milk ( I used more than this to get it mixed )

Directions

Preheat oven to 350 : Spray round 8 inch cake pan

Gently warm non-dairy milk to 110 F and sprinkle in yeast and let dissolve for 5 minutes.

Whisk together 2 cup flour in mixing bowl, sugar, 1 tsp cinnamon and salt

Stir in applesauce and non-dairy milk/yeast using spatula to comings then stir in another 1/2cup flour

Stir in remaining 1/2 cup flour and knead in mixing bowl. 15-20 times until elastic and not excessively sticky

Flour a rolling pin and roll dough into large thin rectangle

In small bowl , combine brown sugar, raisins and 1 tsp cinnamon. Spoon and spread this around center of dough , leaving a 1 inch edge clear

Gently but tightly roll dough up. Using string or pizza cutter , cut roll into 8 equal pieces.

Place bun in prepared pan: a tight fit is ok.

Bake for 25 minutes, until slightly golden and cooked through.

While baking prepare icing . Drizzle icing over buns while they are warm
