Tofu - regular tofu for me, even when you squeeze the water out has a rubbery , tasteless consistency. So see the Crispy Tofu recipe and this is what I substitute whenever tofu is part of the main dish. ) Of course this does not apply to things like Tofu ricotta cheese.
