Cinnamon Apple French Toast

Ingredients
• French Toast
•
• 2 tbs vegan butter
• 1 - 15 oz can coconut milk
• 1 cup vanilla almond milk
• 1/4 cup maple syrup
• 1 tsp vanilla
• Pinch of salt
• 6-8 pieces of thickly cut sourdough bread

• To Make the Cinnamon Apples
•
• 1 tbs vegan butter
• 2 medium apples cored and sliced
• 1 tsp cinnamon
• Pinch of salt
• 2 tbs maple syrup
Directions
To Make the French Toast
In a blender, add the coconut milk, almond milk, maple syrup, vanilla and salt
Blend well for 15 seconds
Put the mixture in a 9 x 9 inch baking dish or wide mixing bowl
Place 1 to 2 thick slices of bread in the container and allow to soak for 30 secs
Meanwhile begin to heat a wide non-stick skillet ( or cast iron ) over medium heat and add the vegan butter
When the butter is melted, add2 pieces of the soaked sourdough to the pan and cook for 3-5 minutes or until golden brown on the bottom. Flip the bread and cook until the other side is golden brown and a little crispy
To Make the Cinnamon Apples
In another medium sauté pan. Heat a little vegan butter over medium heat and add the apples
Sauté for 5 minutes over medium heat, stirring occasionally , until tender

Of cooking, add the maple syrup , cinnamon and salt
Serve on top of the French toast
