Peasant's Pie

Ingredients

• Topping: 4 medium potatoes, cooked and mashed to yield 3 cups ( I use lots more than this)

Sauce: 4 cups brown gravy

Filling: 1 onion coarsely chopped 3 carrots thinly sliced
1 bell pepper, diced
1/2 lb broccoli, cut into stems and flowers 1/4 lb green beans, cut into 1 inch pieces 1 bunch spinach, torn into bite size pieces and parsnips


Directions


Steam veggies ( except spinach ) about 15 mins, until crisp-tender. Remove from heat. Stir in spinach and 4 cups gravy. Spoon this into 9 x 12 inch baking dish sprayed with Pam - I recently found a non-stick cooking spray that has no calories and no oil. Spread mashed potatoes over the top. Sprinkle with a small amt of paprika. Bake 30 mins at 350.
Helpful Hints: Add 1/2 lb brussel sprouts when they are available. Use favorite vegies for filling, cut into bite size pieces. Use about 8 cups of chopped vegies. If prepared ahead, add 15 mins to baking time. Peas and corn are good additions.
